Thank for this, Hallee! On occasion I make a tater tot casserole for my 18-year-old son (while I eat a salad!) and it will be nice to make it a little healthier! I’ll take that heavy cream over chemicals.
Tater tot casserole was a favorite when I was growing up. I may need to develop a “real food” alternative. Thank you for the inspiration!
Thanks Hallee! I do have a question: Have you ever tried to store the cream of mushroom soup? Could it be frozen? The biggest time I use “cream of” soups is when I am out of time. I also don’t usually keep cream on hand since I rarely use it. Wondering if I could make up a lot and freeze is can-sized portions to have on hand when I’m in a hurry. Thanks again!
You can freeze it – no problem!
I love cream of mushroom soup just on its own. I will have to try this recipe. I think for just using as soup, though, I will leave the mushrooms in larger pieces…
