When I decided to make this cake, it took less time to make the batter than it took to preheat the oven. You use a whisk to make it, not a mixer, which means you can whip it up in little time and the cleanup is very easy. It’s a delicious, dense cake – almost like a Blondie.

But, when I inventoried my aluminum pans, I discovered that I’m out of pie plates. Since I try not to take anything that needs to be returned to me (so that the family doesn’t have to keep up with dishes from so many church members bringing food) I decided instead to use a square cake pan and make an apple crisp. This was so good, very simple, and so easy to make.

I’d made his traditional Red Velvet Cake in the form of a cake roll for him to take to work with him that day, so I thought I’d change things up a bit. This was an amazing flavor – it tasted just like a peanut butter and jelly sandwich, but in the form of a cake! I did not not take pictures of the process, but it’s very simple.
