I love making my own salad dressing. I haven’t bought packaged dressing in a long time. This is one of my all time favorite dressings. The first time I made it, I ate salad at every opportunity just so that I could have this dressing. It is tangy with just the right flavoring. I love the garlic mixed with the honey.

My daughter Kaylee LOVES fresh pico de gallo. She’ll sit with a huge bowl of it and a bag of organic tortilla chips and just inhale it. And because of the health benefits to the fresh salsa, I don’t discourage it. With fresh tomatoes, fresh peppers, and fresh onion, the vitamins and minerals can’t be beat. In running the nutritional analysis of the recipe, this is what I discovered. Fresh Pico de Gallo is has no cholesterol, is low in sodium, very high in dietary fiber, high in manganese, high in magnesium, high in niacin, high in phosphorus, very high in potassium, high in thiamin, very high in vitamin A, very high in vitamin B6, and very high in vitamin C.
It’s also REALLY easy. I make it all summer long straight out of my garden.

Once I tasted cranberry sauce made with fresh cranberries, I just can’t imagine going back to the canned kind. This recipe is wonderful – the orange in it cuts the tartness of the berries perfectly.

Hallee and I met as part of that crew, which means we were up at 3:30 in the morning and working throughout the day and in some cases into the night doing a large assortment of odd jobs. It’s a rough gig, but I’m always honored to join in.

Pin ItThis seems to make a huge salad, but when I ate it for lunch, it was a perfect portion. The crunch of the apples and the sweetness of the dried cranberries combined with the balsamic vinegar makes such a beautiful flavor combination. It is a delicious lunch.
