Zucchini Slaw
This colorful salad can be a nice change of pace from the traditional Coastal Cole Slaw type salad. You can use zucchini or yellow squash. It is perfect for the summer picnic, because there is no mayonnaise in it.

Pummelo Avocado Salsa
I created this recipe after researching pummelos. I kept finding it paired with avocados in different things, so I put together a quick salsa. I was a bit worried about the cilantro, but the final product was very tasty.

Fresh Cranberry Sauce
I do not enjoy eating turkey without cranberry sauce. It’s just part of that whole dinner to me. Once I tasted cranberry sauce made with fresh cranberries, I just can’t imagine going back to the canned kind. This recipe is wonderful – the orange in it cuts the tartness of the berries perfectly.

Slightly Spicy Couscous Stuffed Tomatoes
This dish is wonderful served as a vegetable side dish or as a light lunch entrée. Brushing the inside of the tomato shell with Tabasco adds a robust hint of the Southwest.

Pasta for Your Girls and Mine
In order for these thousands of walkers to make it from opening ceremonies through three days of walking to closing ceremonies, they need a little help. That’s where the volunteer crew comes in. Hallee and I met as part of that crew, which means we were up at 3:30 in the morning and working throughout the day and in some cases into the night doing a large assortment of odd jobs. It’s a rough gig, but I’m always honored to join in.

Satisfying Crunchy Mixed Green Salad With Blue Cheese
This seems to make a huge salad, but when I ate it for lunch, it was a perfect portion. The crunch of the apples and the sweetness of the dried cranberries combined with the balsamic vinegar makes such a beautiful flavor combination. It is a delicious lunch.

Hot Potato Salad
Because of a really bad incident in WWII with my grandfather’s unit involving some bad potato salad and several resulting deaths, my family members have never been big potato salad eaters.
Apparently, I made this recipe up because it is made and served right away, avoiding any bad spoilage issues. My mom always made this dish to go with barbecued chicken. It is the perfect flavor accompaniment for the tangy smokiness of the sauce. She insists that I made the recipe up one night when she made BBQ chicken. I honestly can’t remember that, and I can’t remember her ever not making it. But I’ve always been very active in the kitchen, so it’s possible that as a child I came up with the recipe.

Chilled Green Bean & Red ‘Tater Salad
A favorite to any pot luck. I don’t think a church dinner would be complete without chilled green bean and red potato salad.
