Pummelo Avocado Salsa

Pummelo Avacado Relish

I created this recipe after researching pummelos.  I kept finding it paired with avocados in different things, so I put together a quick salsa.  I was a bit worried about the cilantro, but the final product was very tasty.

INGREDIENTS:

½ pummelo
1 avacado
2 TBS diced red onion
2 TBS diced green pepper
1 TBS fresh cilantro
Kosher or sea salt & fresh ground black pepper to taste

SUPPLIES:

sharp knife
cutting board
measuring spoons
bowl

PREPARATION:

Remove the segments from the pummelo.  I cut the rind off then cut out the segments.  You don’t want the membrane – it is very tough.  You just want the juicy pulp.

Remove the pit from the avocado and scoop it out of the skin.  (Click the link for my video on how to cut up an avocado.)

Dice the onion and the pepper.

Chop the cilantro.

DIRECTIONS:

Mix all of the ingredients in a bowl.  Salt and pepper to taste.

YIELD:

About 1 cup of salsa.

I ate this with tortilla chips, but it would be good with pita chips or different crackers.
