These cupcakes were so much fun to make. I just put them together with things I had in my pantry.

Hallee's Galley,
menus & menu planning
Here’s the menu for my family for the week of January 23rd. As far as desserts go, I made a gluten-free chocolate cake this past week and have one from the same site for a vanilla bean cake. I’m going to give that a go since the family love the chocolate one so much. Recipes will be forthcoming!

What are your thoughts on dairy and meat? I am so confused about it all, there is so much conflicting info out there.
As much as I wish otherwise, there isn’t a simple answer to this question.

I made this cake for Gregg’s birthday this year. I’d made his traditional Red Velvet Cake in the form of a cake roll for him to take to work with him that day, so I thought I’d change things up a bit. This was an amazing flavor – it tasted just like a peanut butter and jelly sandwich, but in the form of a cake! I did not not take pictures of the process, but it’s very simple.

Here’s the menu for my family for the week of January 16th. This is a short week for us because we are traveling at the end of the week to go have Christmas in January with my family.

I made this to take to church for breakfast for my Sunday School class. It was really good, and required no syrup for serving. I made it the evening before, popped it into the oven 30 minutes before we had to leave for church, and was able to serve it still warm to my class. I did not take any pictures of the process and I apologize for that. But, the recipe was too good not to share.

As I write this, it’s December 6th and we have just under three weeks to prepare for our Christmas baking gift giving. This is a tradition my mother taught me, and something I look forward to and plan for every single year.

Hallee's Galley,
menus & menu planning
Here’s the menu for my family for the week of December 5th. As far as desserts go, I’m making Stuffed Red Velvet Cookies (but I’m going to experiment with juicing a beet to use for the red dye instead of commercial dye) for a birthday present for a work colleague of Gregg’s, and making Stacy’s Pumpkin Roll for a birthday present for the kids’ horseback riding instructor. I’ll probably be nice and make double to share with the family. :-)

I cooked a big Thanksgiving Dinner for my family, and am excited to share it with you! Everything has its own separate and more detailed post, so I’ve linked each one within the post.
