Satisfying Crunchy Mixed Green Salad With Blue Cheese
This seems to make a huge salad, but when I ate it for lunch, it was a perfect portion. The crunch of the apples and the sweetness of the dried cranberries combined with the balsamic vinegar makes such a beautiful flavor combination. It is a delicious lunch.
3 cups mixed greens
½ apple
2 TBS grated carrot
1 TBS pecans
1½ TBS dried cranberries
1 TBS blue cheese crumbles
1½ tsp extra virgin olive oil
1 TBS balsamic vinegar
salad bowl
grater
measuring cups/spoons
grate the carrot
crumble the blue cheese
chop the apple
Combine all ingredients.

I just bought some ricotta salata, so I think I’ll sub that for the blue cheese crumbles. Great recipe!

This salad looks yummy, but then again I love all salads. We are currently eating a lot of feta sheep cheese, my husband loves it in his salads.
