Chili-Mac is one of my kids’ favorite dinners. I love how this is served over cornbread instead of sloppy-joe style over hamburger buns. This is a very-quick, easy to make meal – especially if you’re using leftover cornbread. I used grass-fed beef, and even with organic vegetables it’s still less than $4 per serving.

Asian Ground Beef Skillet
I love how this recipe is a sweet and sour flavor – something that you just wouldn’t think to pair with hamburger meat, yet it absolutely works. It takes almost no time to prepare and is a nice, quick meal when you’re in a hurry but want to feed your family something healthy. I use grass-fed hamburger meat. This is a wonderful recipe with a hint of kick. If you have pre-prepared rice, it’s a quick fix. But remember – the rice will take 45 minutes to cook so try to plan ahead a little bit.

Green & Gold Casserole
I graduated from Spencer High School, home of the mighty Greenwave. Don’t ask me what that means – in all of my years there, I was never able to figure that out. Our mascot was an owl. BUT, our colors were green & gold. That was always cool, because my family is from Springfield, Oregon, a small town that is a sister-city to Eugene Oregon, home of the Oregon Ducks – whose colors are also green & gold. Which is what makes this casserole so much fun. I could take it to a class reunion or a football party and be a winner either way.

Sweet Potato Casserole with Pecans
I will admit that I made a mistake when I made this recipe. I was in a hurry and skimmed the recipe and just didn’t read it clearly. The original recipe called for the items to be added to the bowl up to a point, then a streussel-type topping made with pecans. Instead, I dumped it all in, then realized what I’d done — and just threw some mini marshmellows on top instead. It was really good, but I will give you the correct instructions after we go through the pictures of how I did it.

Macaroni & Cheese with Turkey Ham
This is the perfect comfort food casserole. It’s also a big favorite at pot lucks and church dinners. It is also a quick fix. The cheese sauce can easily be made while the pasta is cooking. The timing almost always works perfectly for me that when I’m done with the sauce, the pasta is perfect and ready to drain. If you leave the turkey ham out of the recipe, it’s the perfect casserole main dish for a Lent evening.

Easy Tuna Casserole
This is THE EASIEST meal you can make for your family. My children love it. They get seconds and thirds. Throw it on a plate with some green peas and a garden salad, and you have a healthy, home cooked meal that takes you as long as it takes the macaroni to boil.
