Asian Ground Beef Skillet
I love how this recipe is a sweet and sour flavor – something that you just wouldn’t think to pair with hamburger meat, yet it absolutely works. It takes almost no time to prepare and is a nice, quick meal when you’re in a hurry but want to feed your family something healthy. I use grass-fed hamburger meat. Coupled with organic vegetables, it’s still just $4 per serving.

1 pound ground grass-fed beef
2 TBS soy ginger sauce
2 TBS water
1 cup pineapple chunks (I prefer fresh, but you can use canned)
1 red bell pepper
6 green onions
1 pound rice vermicelli noodles
4 iceberg lettuce leaves

measuring cup/spoon
skillet
pot and strainer

Prepare vermicelli noodles according to package instructions.
Dice red bell pepper.
Slice green onions.

In skillet over medium-high heat, brown the beef with the soy ginger sauce and water. Add the pineapple, chopped red pepper, and the onion.
Heat until peppers are soft.
Toss with the rice vermicelli noodles.
Serve in lettuce cups.

I bought a bunch of ground beef on sale.
And then had lettuce to eat and wanted lettuce wraps,
but didn’t have chicken.
We’ve eaten our share of tacos and hamburgers in the past week.
This is on our list for this week now! :)
