Secret Ingredient Taco Salad

This is a family favorite. It’s a very quick, inexpensive meal that can feed several people.

INGREDIENTS:

1 lb ground hamburger
1 small onion
1 can kidney beans
1 small can tomato sauce
1 tsp Kosher or sea salt
½ tsp fresh ground black pepper
1 TBS cumin
2 tsp chili powder
1 tsp garlic powder
1 head iceburg lettuce
1 tomato
1 can black olives
4 scallions
8 oz. cheddar cheese
1 bag Doritos
sour cream
taco sauce or salsa

SUPPLIES:

Measuring cups/spoons
frying pan
large bowl
cutting board/sharp knife

PREPARATION:

Chop onion.

DIRECTIONS:

Cook hamburger and onion in frying pan over medium to medium-high heat until hamburger is browned.

In the meantime, chop lettuce.

Slice black olives, chop tomato, slice scallions.

Grate cheese.

Add it all to the bowl.

And now for the secret ingredient — and this makes this dish fall to the absolutely-not-so-healthy category. Oh, but it makes it taste so good. (And, you can skip this step if you want to.)

Update: We don’t eat Doritos anymore because we try to stay away from non-organic corn (due to GMO’s).  However, I have discovered some organic Dorito-like chips at Whole Foods, and will occasionally splurge on them to make this dish.  I’m good with that.  :-)

Crush half the bag of Doritos and put them in the bowl.

When the hamburger is browned, drain it and put it back in the frying pan. Add the can of kidney beans and the can of tomato sauce.

Add the spices and mix well.

cook until hot

Simmer about 5 minutes. Add to the bowl and mix all of the ingredients well.

Serve with sour cream, salsa, and the remaining bag of Doritos.

YIELD:

Serves 6 easily. But don’t expect too much for leftovers.
