Broiled Blue Cheese Tenderloin Steaks
A perfect recipe for a special occasion. Our daughter LOVES steak. Any time she talks about enjoying a vegetarian lifestyle, we remind her that vegetarians don’t regularly consume medium-rare steaks.
4 beef tenderloin steaks — cut 1 inch thick
1 large clove garlic — halved
2 teaspoons chopped fresh parsley
½ teaspoon Kosher or sea salt
CHEESE TOPPING
2 tablespoons cream cheese — softened
4 teaspoons crumbled blue cheese
4 teaspoons plain yogurt
2 teaspoons minced onion
Dash fresh ground white pepper
Measuring cups/spoons
Good sharp knives
Clean cutting board for vegetables
Clean cutting board for meat (if necessary)
Broiler pan
Preheat oven set for broil.
Chop fresh parsley, medium fine.
Cut beef tenderloin steaks 1 inch thick if necessary.
Slice 1 large clove garlic in half.
In small bowl, combine all cheese topping ingredients and set aside.
Rub each side of beef steaks with garlic. Place steaks on rack in broiler pan so surface of meat is 2 to 3 inches from heat. Broil 5 to 6 minutes.
Season with ¼ teaspoon salt. Turn and broil 5 to 6 minutes.
Season with an additional ¼ teaspoon salt. Top each steak with an equal amount of reserved cheese topping. Broil an additional 1 to 2 minutes. Garnish with parsley.

This gives you a steak cooked medium to medium-rare. If you want it to be more done, just broil it for a couple extra minutes on each side before adding the blue cheese. Use a meat thermometer to determine doneness. You can find a temperature chart here.

oh yum! im making a sausage and apple dish this week with blue cheese.(you would probably have to make it with turkey smoked sausage) but the steak looks devine!
