These were so good. I think what I liked about them was the lack of green pepper – green pepper throws the taste of baked beans off for me. I think some beef bacon would have been good in them as well, but this recipe is entirely vegetarian. The flavors were wonderful. Because there are no meat or dairy products in it, this is a perfect dish for a Daniel Fast or for Lent.

Here’s the menu for my family for the week of March 14th. This is an unusual week for me. Our church is taking part in a call to 40 days of fasting and prayer. I’ve decided to do a Daniel Fast throughout the 40-days, and that begins on Wednesday. Gregg’s food options in Afghanistan aren’t great, so he will maintain his weekly day of a full fast. Kaylee is going to be fasting from refined sugar. Scott and Johnathan will not be fasting.
On top of that, I have a Kentucky Romance Writers Workshop this weekend that will involve eating dinner out three times, and the children eating elsewhere.

Here’s the menu for my family for the week of March 7th. As far as desserts go, my cookie jar sat empty for so long that I finally removed it from the counter, and my husband hasn’t had homemade cookies from me in WEEKS. Consequently, I’m declaring this week to be cookie week. My husband is getting Oatmeal Raisin Cinnamon Chip Cookies, and my kids are getting Whole Wheat Dark Chocolate Chip Cookies. That jar will be refilled! It’s also Kaylee’s birthday party Saturday. She wants a tiered zebra striped cake. This oughta be fun. :-)

Here’s the menu for my family for the week of February 28th. As far as desserts go, I have some peaches unthawed that I used to make Scrumptious Cookie Pizza, so I’m going to make a peach cobbler or a Peach Pie with Whole Wheat Crust with those. It is also my birthday week, so I’m going to help the kids make me a birthday cake! I’ll likely splurge and go chocolate chocolate. This weekend we will be celebrating my niece’s 4th birthday, and she has asked me to make her a Wonder Woman cake. Yay me! How exciting! I’ve been working on ideas for a few weeks.

These are good with a toothpick at an hors d’oeuvres party, or added to spaghetti sauce to as a wonderful topper for pasta. You can cut the meat in half with ground turkey.

This is the perfect recipe to make for a breakfast or brunch. They are packed with flavor from all of the spices, and the cream cheese is a beautifully decadent addition.

I love making this and taking it to events. It’s attractive, striking to the eye. It’s delicious. And, as far as desserts go, it’s moderately healthy compared to what desserts could be.

Potato soup is one of my favorite dishes. I often encounter it with ham in it, which is weird to me (even before I quit eating pork). The way my mom makes it is meat-free and very very simple. The flavor combination of the cream and the celery is really what makes it taste so good to me. I’ve even been known to thrown in some celery seed for added flavor. This soup is filling, hearty, and goes wonderfully with Whole Wheat Crusty Cheese Bread.

We love smoothies. I use organic plain yogurt, so there is no added sugar there, and I use whey powder that does’t have any artificial sweeteners in it – be careful with labels because there are very few flavors within very few brands that have good ingredients. But we’re able to weed through them and come up with a amazing and healthy breakfast that is easily consumed “on the run.” I have this for breakfast at least once a week, and often for a mid-morning snack.
