Hearty Whole Grain Waffles
This is my go-to recipe for waffles in the hotel-style waffle maker. They have an amazing flavor and pack a nutritious punch that would be hard pressed to be beaten. I love serving them with real butter and real maple syrup.

1½ cups whole wheat flour
½ cup ground flax seeds
⅓ cup rolled oats
¼ cup sunflower seeds
1 TBS baking powder
1 TBS brown sugar
½ tsp Kosher or sea salt
1⅔ cup whole milk
⅓ cup extra virgin coconut oil, melted
2 eggs

Preheat waffle iron.
Melt coconut oil.

Mix dry ingredients.
Add milk, coconut oil, and eggs.
Mix just until moistened.
Follow the directions for your waffle iron.

I have thought about blending the dry ingredients in the blender to break down the oats and sunflower seeds. Kaylee loves the flavor but doesn’t like the texture and I think she’d like that better.

Hallee, this looks wonderful! If you look at the glycemic impact of food, grinding the dry ingredients would raise the impact. If I were making this for myself and my husband, I would not do that. If I were making it for my 20 year old son…who would not like the texture, I would. It still has nutrients that plain waffles would not… Now I can’t wait to make them, but we are getting ready for our trip to Sydney so I don’t see a relaxing breakfast on my “plate” before we go…this definitely will be my husbands birthday breakfast! There is no other way to have waffles or pancakes but with REAL maple syrup… Be blessed and have a wonderful weekend.
Just tried to make these…they sound awesome! They flax totally jammed up my grinder! I knew this, I have used the grinder with flax before and I mixed it up with the wheat…this time I just threw all the flax at once!! ooops :) Maybe next time I should wake up a little more before going in the kitchen!! I will use the recipe, just not today !! Thanks!
My grain mill has a warning right in the chute where you pour the grain not to grind flax seed. It says it’s too oily. I actually purchase it ground and whole instead of grinding my own.
I wonder if soaking it would lower the glycemic impact? I am really unversed in soaking vs. not soaking. I’m trying to learn it all, but there’s such contradictory material out there.
