Dark Chocolate Filling
This filling is a perfect accompaniment to any cake you’ll frost with Chocolate Buttercream Frosting.
1 large egg yolk
3 TBS heavy cream
½ cup sugar
¼ cup dark chocolate chips
1 TBS butter
double boiler -OR- metal bowl and pot
whisk
measuring cups/spoons
mixer
Bring water in double boiler to boil.
In the top of the double boiler (or in your metal bowl) mix egg yolk and heavy cream.
Whisk in sugar, chocolate, and butter.
Cook, stirring constantly, until bubbles form on the edges.
Remove from heat. Beat until it thickens.
Let cool slightly.
Spread onto cake layer.
Leave some room on the edges so that the filling doesn’t squeeze out when you put the top layer on.
Enough filling for one (1) 2-layer cake.
