Mascarpone Cheese Frosting
I created this recipe when I went to make cream cheese frosting and discovered that I was out. It was absolutely delicious and will be my first choice above cream cheese from now on. Perfect for your red velvet cakes, spice cakes, applesauce cakes…the options are limitless.

½ cup of butter, softened
16 ounces mascarpone cheese, softened
2 pounds powdered sugar

Beat butter and mascarpone cheese until creamy.
Gradually add powdered sugar, beating until light and fluffy.
Stir in vanilla.
Frost your favorite cake, cupcake, or cookie.
