Peanut Butter & Jelly Cake

I made this cake for Gregg’s birthday this year. I’d made his traditional Red Velvet Cake in the form of a cake roll for him to take to work with him that day, so I thought I’d change things up a bit. This was an amazing flavor – it tasted just like a peanut butter and jelly sandwich, but in the form of a cake! I did not not take pictures of the process, but it’s very simple.

Menu Monday 13 SEP 10

Here’s the menu for my family for the week of September 13th. This is my first week with my new schedule, so I will be doing all of my baking on Monday. My husband has requested Whole Wheat Oatmeal Raisin Cinnamon Chip Oatmeal Cookies. I also may try my hand at carrot cake – something I have never made before but something I’ve always wanted to try. A friend of mine posted on her Facebook a chocolate chip whole wheat pumpkin muffin recipe and said it was delicious. I have the rest of last year’s pumpkin in the freezer still, and pumpkins growing in the garden that will be used to replace the stash, so I need to do some pumpkin baking. I think chocolate chip pumpkin muffins is a brilliant use of my supply.

Menu Monday 09 Aug 2010

We are still out of town, still in a hotel with a 2-burner stove, a microwave, 1 large pot, and 1 large frying pan. We do have access to a grill, so we’ve been trying to use that to cook the meat as much as possible. Breakfasts are provided by the hotel.

Here’s the menu for my family for the week of August 9th. As far as desserts go, we have store-bought ice cream and Fresh Bakery bakery pound cake.

Scrumptious Star Fruit Upside Down Cake

My kids LOVE star fruit. I’m usually able to find it during Christmastime and try to include one in their stockings every year. We use it as an opportunity to talk about the Star of Bethlehem.
