Rosemary & Garlic Grilled Birmingham Lamb Loin Chops

Posted by Hallee on Aug 5, 2010 in entrees, Hallee's Galley, Mediterranean, Recipes

I made this lamb in a hotel room in Birmingham, Alabama. The lamb was purchased at Fresh Market and was from a local farmer. It was AMAZING. As I type this it’s 8:00 in the morning and I’m wishing I had another plate of it.

Savory Traditional Chicken Tamales

Posted by Hallee on Jul 30, 2010 in entrees, Hallee's Galley, Mexican, Recipes

Gregg judges a Mexican restaurant by their tamales. If they aren’t hand made, steamed in a corn husk, with the right favors he simply won’t go back to that restaurant. Consequently, it took me several years to even attempt a recipe for tamales. I was so excited to find one that he loves.

Quick & Easy Sloppy Joes

Posted by Hallee on Jul 9, 2010 in American Quisine, entrees, Hallee's Galley, Recipes

My dad came up with this recipe one time. My mom was somewhere doing something and Daddy had to make dinner. He browned hamburger then started dumping things into the pan. He used home canned tomatoes and home canned green beans, which made his version amazing. I’ve not enjoyed Sloppy Joes without the green veggie since.

I derived this recipe from Food Network’s Ina Garten. It tastes just like summertime to me. It is also beautiful when it’s sliced. It has become a summer staple in our house.

Comfort Food Meatloaf

Posted by Hallee on Jul 9, 2010 in American Quisine, entrees, Hallee's Galley, Recipes

Meatloaf is one of my favorite dishes, if I prepare it or if my mother prepares it. I’ve learned not to order it in restaurants or get it off of buffets, because a lot of people do something to it that I just don’t do – but I’m not sure what that is. I’ve always used green peppers when I make it, but I didn’t have any the day I made it for these pictures, so I used yellow peppers. I LOVED the difference. I will from now on use yellow peppers to make my meatloaf.

Hallee’s Fabulous ‘Travel’ Sandwiches

Posted by Hallee on Jun 9, 2010 in American Quisine, entrees, Hallee's Galley, Recipes

My family calls these travel sandwiches because when we go on a trip, we always have some in our cooler. Whenever we stop for lunch, we just cut chunks of sandwich off and pass them out. They are beyond delicious, incredibly good for you, and better the longer they sit.

Decadent Cookies & Cream Cupcakes

Posted by Hallee on Jun 3, 2010 in Desserts, Hallee's Galley, Recipes

My friend Heather at Out of the Box into the Kitchen posted the link for this recipe on her Facebook. I’d been looking for something fun and new to take to a church party, and the pictures were so amazing and so appealing that, despite my aversion to packaged cookies, made me want to make them. I found organic chocolate sandwich cookies and felt moderately better about the recipe — but enjoyed the flavor despite the processed product in it. (HA!) So, I’m not going to fool you into thinking there’s anything moderately good for you about these. I did use organic eggs and organic cookies — that’s the best I can give you. But, oh my, they were good. Very rich, but very good.
