Emergency Substitution: Sweetened Condensed Milk

Sometimes when you find you didn’t have great planning and took advantage of a relatively well stocked pantry that didn’t end up being as well stocked as you thought, and when you’re baking a cake at 5:00 in the morning and you have two sleeping toddlers upstairs and a husband in Afghanistan, and it’s not really convenient to run to the store to grab that one pantry item you need right now, it’s nice to know that there is a possible emergency substitution. (heh) This happened to me. As I was making Tres Leches Cake for Cinco de Mayo, I went to put together my “three milks” and discovered I didn’t have any sweetened condensed milk. Normally, I would have just set the cake aside to do later, but the milk needs to be added to the cake while it’s still warm, and at 5AM, there was no way I could do it. So, I discovered a good sweetened condensed milk substitution. The cake tasted fantastic, so I’m calling this one a success.

Scrumptious Cinnamon Honey Scones with Raisins

I saw this recipe on GNOWFGLINS’ blog. This is a soaked wheat recipe – you soak the wheat overnight in an acid (in this case, apple cider vinegar) so that the phytic acid in the grain is broken down and your body is able to absorb all of the nutrients in the grain. I made this to take to Sunday School for breakfast. I worried that they would be heavy, dense, but they were amazing. They were so light, and melt-in-your-mouth. The original recipe is called “biscuits” but, they seemed more like a scone than a biscuit. They were SO good. My pictures are showing me making a double-batch to accommodate the Sunday School class.

Very Unordinary Chunky Vegetarian Chili

If you are entertaining mixed palettes, this meal will satisfy all tastes. A from-scratch chili that uses many different vegetables as well as beans and lentils to provide that ‘full’ feeling that chili with meat offers. Add fresh parsley and basil to taste, if desired. The lack of dairy or meat in this chili makes it a perfect meal during a Daniel Fast or Lent.

Savory Scalloped Potatoes

This is the perfect side dish for just about any meat main dish, from meatloaf t0 leg of lamb. I LOVE scalloped potatoes. I didn’t used to make them because I worked and would get home so late to be able to put them in the oven and have them cooked in time for dinner, so to me they became a “special” side. Despite having my menu planning help me to know what to prepare when and how to have it ready in time for dinner, in my mind, scalloped potatoes are special.

Amazing Au Gratin Potatoes

Resurrection Cookies

I make this recipe with my kids every Easter eve. We enjoy the cookies the next morning with our eggs for breakfast the next morning. The kids can’t wait to open the oven door the next morning. I originally found the recipe here. I LOVE how I get to read the Bible with them as we make these cookies, how they get to have some application to apply to the story to help them retain what they’re reading and/or hearing. This is a beautiful hands-on tool to teach the resurrection of our Lord.
