Menu Monday: 18 OCT 2010

Here’s the menu for my family for the week of October 18th. This is my first week after concluding the Daniel Fast. I feel very strange considering meat and dairy back into my diet, as much as I’m looking forward to it. I think I just got used to just the fruits and vegetables. As far as desserts go, I’m going to hand the kitchen over to Kaylee this afternoon and let her make something for the week.

Slow Cooked Kidney Beans

It is hard to find a good bean recipe that doesn’t contain pork of any kind. Even buying canned beans, you have to read the label carefully to make sure that it’s pork-free. It’s nice to find a slow cooked bean recipe that is just beans and seasoning.

Fresh Peach Cobbler

I haven’t had a chance to eat this yet. Since I’m doing a Daniel Fast, I can’t eat the sugar. But, I made this for the volunteers on Tuesday night and it received rave reviews. I managed to save Kaylee a serving, and she said that it was “Amazing!”

Pumpkin Rolls?

So, I spent most of my adult life in Florida – a place that might as well be its own country it’s so removed from many traditional things I’ve heard of in other parts of the country. I’m sure that has something to do with the lack of seasons. Prior to Florida, I was an Army brat who lived on post – another way that local customs and traditions get diluted.

Easy Kid-Friendly Fish Sticks

This dish took no time to put together. I used tilapia, because that’s what I had on hand, but just about any white fish will do. The kids loved it, and they loved helping me make it.

Traditional “Wash Board” Omelet

During cattle drives, cookie had to clean out the chuck wagon bin or “crumb castle” every couple of days and that was when wash board omelets might be served. Full of vegetables, colorful and light, this delicious concoction is filling and colorful.

Hearty Sweet Potato & Black Bean Hash

I saw someone reference a sweet potato hash somewhere a few months ago, and I thought that sounded really good, so I came up with a recipe. This was so good – it was hearty enough to be the main dish of a meal.

Roux [roo]

A roux is a thickening agent made from some kind of fat with an equal portion of flour. You melt the fat, add the flour, then cook until the flour taste is removed.

Fresh Peach Pie with Whole Wheat Crust

Peaches just taste like summertime to me. I love biting into a sun-warmed peach and having the burst of juice and sweet flesh fill my mouth. I had a big basket of peaches recently and wanted to capture some of that summer sunshine for dessert that night. So I made a fresh peach pie as if it were an apple pie. It was amazing.
