Easy Kid-Friendly Fish Sticks

This dish took no time to put together.  I used tilapia, because that’s what I had on hand, but just about any white fish will do.  The kids loved it, and they loved helping me make it.

INGREDIENTS:

4 white fish fillets
1 egg
1 cup Italian bread crumbs
½ tsp Kosher or sea salt
½ tsp fresh ground black pepper
extra virgin olive oil spray

SUPPLIES:

sharp knife/cutting board
2 bowls
baking sheet

PREPARATION:

Heat oven to 425° F.

Beat the egg.

Spray baking sheet with olive oil.

DIRECTIONS:

Slice the fish into “sticks.”

Mix the bread crumbs, salt, pepper.

Dip the fish into the egg until it is well coated.

Roll in bread crumbs.

Lay on baking sheet.  Spray lightly with olive oil spray.

Bake for about 7 minutes, then remove from oven and turn the fish over.

Bake another 5-7 minutes or until golden brown.

4-6 servings
