Healthy Pleasurable Smoky Barbeque Style Chicken Pizza Pie
Spent the weekend in Chicago! Home of the real Chicago style DEEP DISH pizza pie.
It got me thinking … what is a pizza, really? Honestly, most of the time, a commercially purchased pizza in most places is a hot, steaming, deep-dish slice of nothing but a fast carboydrate made from processed white flour covered with watery tomato sauce that is mostly high fructose corn syrup and processed cheese loaded with hydrogenated oils.
I’m not saying give up on pizza. Who would want to do that? I am saying it is possible to make a great tasting and actually HEALTHY and GOOD FOR YOU pizza.
I looked for inspiration and designed 5 pizza recipes that meet those criteria. This one is a special treat because I get to use my great friend Kelly the Kitchen Kop’s very own barbeque sauce.
This recipe yields about 8 good slices of just over 275 calories per slice (276 to be exact), a whopping 21 grams of protein, 33 grams of carbs, just 7 grams of fat and less than half from saturated fat, 1.5 grams of fiber, and lots of calcium and vitamin C.
Be sure to use my easy and delicious whole-wheat pizza crust (link).
14 oz. whole-wheat pizza crust, about 12″ round, or similar
15 oz. Kelly the Kitchen Kop’s barbeque sauce or similar
12 oz of grilled chicken strips
1 fresh grilled corn on the cob, cut from the cob
½ cup chopped red onion
¾ cup shredded smoked gouda cheese
¾ cup shredded mozzarella or Italian six-cheese blend
Pizza stone
Preheat oven and pizza stone to 450° degrees F.
Spread ¼ cup Kelly the Kitchen Kop’s barbeque sauce onto pizza crust.
Toss chicken with remaining barbeque sauce. Arrange chicken evenly on pizza. Top with onion, corn, and cheeses.
Carefully slide pizza onto pizza stone and bake for about 12-15 minutes or until the cheese is melted and the crust is crisp.
