Here’s the menu for my family for the week of February 14th. As far as desserts go, we have Floating Hearts to enjoy today, and I’ll be making fruit pizzas (recipe to follow) for a night at church this week!

Pin ItMy house is in a state of “too much traveling in too short of a time” chaos. In an effort to help me in the only way that he can from so far away, my awesome husband took the initiative and posted four amazing and healthy pizza recipes so that I can take the week “off” and get caught up with life. And because he is much more diligent about details than me, you’re even getting nutritional information in these recipes!
I improvised. I had some table water cookies and thought that they would make a good crust. I worried that they would get soggy, but they didn’t at all. They were perfect. I made the sauce quickly, using ketchup and spices. Twenty minutes after Scott voiced the desire for pizza for lunch, we were sitting down to enjoy it.
Pin ItThis is one of my favorite lasagna recipes. It is extremely simple and so easy to make. I love the fact that you don’t have to cook the noodles beforehand, which makes it much less labor intensive and easier to put together. The lack of meat in the recipe makes it a perfect recipe during Lent as well.
