This is a quick pasta sauce that every member of our family will love. The kale is a wonderful source of vitamins A, C, and K, as well as omega 3 and omega 6. You can use any kind of pasta you want when making this dish. It takes very little time to make, and using grass-fed beef and organic vegetables it’s still barely $3 per person.

Here’s the menu for my family for the week of June 6th. My menu will be scaled down a bit for the next few weeks. Kaylee is gone, and Gregg won’t be home until later in the month, so the meals are going to be much more toddler-friendly. As far as desserts go, I have some fresh peaches, so I think I’m going to make a Fresh Peach Pie. I also made a French Vanilla Bean Honey Ice Cream – I will post that recipe this week.

In an effort to help me in the only way that he can from so far away, my awesome husband took the initiative and posted four amazing and healthy pizza recipes so that I can take the week “off” and get caught up with life. And because he is much more diligent about details than me, you’re even getting nutritional information in these recipes!
I’ll admit that I have not yet made this dish. However, it sounds fantastic and it is more of a “when I add it to the menu” kind of thing rather than an “if I add it to the menu.” This would be an amazing brunch or lunch dish, a perfect potluck change from the normal pot of country beans, or the base for a vegetarian dinner. It is almost limitless as a dish. I cannot wait to try it.
