Chocolate “Cookie Machine” Cookies

I have a Wilton Cookie Pro cookie machine.  I use this recipe to make chocolate cookies in all different kinds of shapes.  I love it for Christmas cookies because of all the different shapes available.

INGREDIENTS:

2½ cups fresh ground whole wheat flour
1 cup sugar
⅔ cup packed brown sugar
⅔ cup cocoa powder
½ tsp baking powder
¼ tsp Kosher or sea salt
1¼ cup unsalted butter
2 large eggs
1 tsp vanilla

SUPPLIES:

large mixing bowl
mixer
spoon
sifter
small mixing bowl
cookie machine (I use Wilton Cookie Pro)
wire cooling racks

PREPARATION:

Preheat oven to 375° degrees F.

DIRECTIONS:

In large mixing bowl, cream butter and sugars on medium high heat until fluffy.  Add eggs, one at a time, beating well after each addition.  Add vanilla.  In a smaller bowl, sift together flour, cocoa, baking soda, and salt.  Add to butter mixture gradually and beat well.

Shape into a small log and put in cookie machine.  Press ou shapes onto ungreased cookie sheets.

Bake at 375° degrees F for 10-12 minutes.

Remove from cookie sheet and cool on wire cooling racks.

YIELD:

7-8 dozen cookies
