Here’s the menu for my family for the week of June 6th. My menu will be scaled down a bit for the next few weeks. Kaylee is gone, and Gregg won’t be home until later in the month, so the meals are going to be much more toddler-friendly. As far as desserts go, I have some fresh peaches, so I think I’m going to make a Fresh Peach Pie. I also made a French Vanilla Bean Honey Ice Cream – I will post that recipe this week.

I wanted to make something that could be made in a big batch, then put in the freezer for a quick breakfast, or eaten for breakfast while traveling. This recipe was wonderful. You can adjust it any way you like – change the meat, add different fillings. It’s extremely versatile.

Pin ItThis is my go-to recipe for waffles in the hotel-style waffle maker. They have an amazing flavor and pack a nutritious punch that would be hard pressed to be beaten. I love serving them with real butter and real maple syrup.
Pin ItThese were so good. I think what I liked about them was the lack of green pepper – green pepper throws the taste of baked beans off for me. I think some beef bacon would have been good in them as well, but this recipe is entirely vegetarian. The flavors were wonderful. Because there are no meat or dairy products in it, this is a perfect dish for a Daniel Fast or for Lent.

My children love ranch dressing. I keep a jar in my refrigerator to put in Kaylee’s lunches with carrot sticks, a snack for the boys with cucumber slices, or for salads at dinner time. I played with the spices and seasonings until I got it just right for my family. The measurements below are very conservative. Taste the dressing when it’s mixed together and add more as you need to.
