Comforting Herbal Broth

As much as we try, it’s not always possible to completely avoid the cold or flu some seasons.  This broth will provide you with some herbal comfort when you’re ill.  It’s flavorful, warming, and packed with vitamins that will help your body battle whatever bug has bitten you.

INGREDIENTS:

6 garlic cloves, minced
1 TBS olive oil
2 cups vegetable or chicken broth
1 tsp finely chopped fresh cayenne pepper or ½ tsp cayenne pepper
1 tsp finely chopped fresh rosemary or ½ tsp dried
½ tsp fresh thyme or ¼ tsp dried
Pinch to ¼ tsp salt if the broth is unsalted

SUPPLIES:

measuring cups/spoons
saucepan

PREPARATION:

Dice the garlic.  Chop the herbs.

DIRECTIONS:

Saute garlic in olive oil over high heat very briefly – just until the garlic starts to change color.  Add the broth and turn the heat down to medium-low.  Simmer for 20 minutes.  Add the remaining ingredients.  Simmer for 5 more minutes.

Sip slowly.

YIELD:

2 cups
