Hearty Beef Stir Fry

My family loves this dish. It’s so full of fresh vegetables and good vitamins. Serve it with white rice or brown rice and Chinese noodles. We even buy little boxes of fortune cookies to make dinner festive.

INGREDIENTS:

1 lb thin sliced beef
2 TBS sesame oil
salt and pepper
½ onion
½ cup Teriyaki sauce
2 carrots
1 crown broccoli
3 ounces snow peas
1 cup sliced Nappa cabbage
1 can water chestnuts
1 can bamboo shoots
1 can straw mushrooms
1 can baby corn
2 TBS corn starch
1 cup water

SUPPLIES:

Measuring cups/spoons
large wok or frying pan
wooden spoon
cutting board (1 for meat and 1 for veggies)
sharp knife

PREPARATION:

Slice onion.

Slice carrots.

Cut broccoli into bite-sized pieces.

Cut the canned corn into bite-sized pieces.

Slice the cabbage.

DIRECTIONS:

Heat oil over medium to medium-high heat in the wok. Be careful because sesame oil will burn quickly. Add the meat.

Cook stirring until browned on all sides. Salt and pepper to taste, being very conservative with the salt — the Terryaki sauce is going to be salty.

Add the onions.

Cook until the onions soften.

Add the carrots.

Cook and stir about 3 minutes. Add broccoli.

Add peas.

Pour in the Terryaki sauce and stir well.

Add the water chestnuts, bamboo shoots, and straw mushrooms.

Add the corn.

In the bottom of a measuring cup, put the cornstarch.

Add enough water to measure 1 cup. Stir until smooth.

Pour into the wok.

Turn up the heat and heat to boiling, stirring constantly. When the sauce thickens, remove from heat and stir so that all of the meat and veggies get coated in the sauce.

You can make this with chicken, too. Cut two chicken breasts into thin strips. Make sure the meat is fully cooked before adding the veggies.
