Turkey Burgers with Basil Mayonnaise

I didn’t used to like ground turkey.  Back in my previous life with no grocery budget to speak of, I’d buy ground turkey because it was cheaper than ground beef.  But it was gristly and just didn’t taste good.  I came across some ground turkey breast on a manager’s special at my grocery store and thought I’d give it another go.  After much searching, I found this amazing recipe.  I’ve made it twice now, tweaked it a bit here and there, and it is a WONDERFUL sandwich.

INGREDIENTS:

FOR BASIL MAYONNAISE:
¼ cup mayonnaise
1 tablespoon sliced fresh basil

FOR TURKEY BURGERS:
¼ cup whole milk
2 tablespoons finely chopped red onion
1 tablespoon sliced basil
1 tablespoon dry bread crumbs, Italian style
⅛ teaspoon Kosher or sea salt
⅛ teaspoon fresh ground black pepper
1 pound ground turkey breast
4 whole wheat hamburger buns

SUPPLIES:

sharp knife and cutting board

measuring cups and spoons

bowl

frying pan or griddle

spatula

meat thermometer

PREPARATION:

Slice basil.

Chop onion.

Mix 1 TBS sliced basil with mayonnaise.  Cover and put in refrigerator for 20 minutes.

DIRECTIONS:

Mix milk, seasonings, bread crumbs, and onion in a bowl.

Add the ground turkey and mix well.

Form into four patties.

Cook on a frying pan or a griddle at medium heat until the internal temperature reaches 165° degrees F.  Be careful because the 19-month-old is going to try to reset everything if he gets ahold of the thermometer and all sorts of alarms and such will go off.

Slice whole wheat hamburger buns.

Spread basil mayonnaise on either side.

Put lettuce on one side.  Place a cooked patty on the other.

Put together and enjoy.  I serve with Scrumptious Sweet Potato Sticks.
