I wanted to make something that could be made in a big batch, then put in the freezer for a quick breakfast, or eaten for breakfast while traveling. This recipe was wonderful. You can adjust it any way you like – change the meat, add different fillings. It’s extremely versatile.

Turkey Breast in the Rotisserie
I LOVE my rotisserie oven. I don’t know why food tastes so much better coming out of the rotisserie than the oven, but it does. I prefer to cook meat in it if I can. This turkey breast was amazing – I used it to make lunch meat and the flavor even in thinly sliced pieces was just wonderful.

Traditional Turkey Gravy
When my mom makes turkey gravy, she always makes giblet gravy (recipe to follow). It took me many years to learn how to make any other kind of gravy. Now that I make this recipe, it would be hard for me to say whether I prefer giblet gravy over this traditional gravy or not! Roasting a turkey may seem like a daunting task, but it’s really not that difficult. It’s just a matter of making sure it’s cooked all the way more than anything, and making sure you don’t over-cook it. Under-cooked turkey is a health hazard, and over-cooked turkey can be dry.

Several months ago, our local Kroger had turkeys on sale for 59¢ a pound. I checked with Heather at Couponning 101 if that was a good deal, because I typically just shop for meat and staples at the commissary. She told me it was, so I bought two of them.
