A delicious cake, especially when frosted with buttercream frosting.


2 ⅞ cups cake flour
1 ⅞ cups sugar
4 ½ tsp baking powder
1 tsp Kosher salt
⅔ cup coconut oil
1 ¼ cup milk
2 tsp vanilla extract
5 egg whites


Measuring cups/spoons
mixing bowl
rubber spatula
cake pan (two 9″ round pans or one 13 x 9″ oblong pan)


Grease and flour pan(s).

Heat oven to 350° degrees F.


Sift together the flour, sugar, baking powder, and salt. Add the coconut oil. Mix together the milk and vanilla and add about half to the bowl. Beat medium speed for 2 minutes. Add remaining milk/extract and the egg whites and beat another 2 minutes.

Pour into prepared pans. Bake until a toothpick inserted in the center comes out clean. For layers, about 30-35 minutes, for oblong about 35-40 minutes.

This is a quick and easy cake to make for any occasion. Fold in ⅔ cup chocolate chips for a chocolate chip cake and frost with chocolate buttercream frosting.
