Yummy Yellow Cake
A delicious cake, especially when frosted with buttercream frosting, or best yet with chocolate buttercream frosting.
2 ½ cups cake flour
1 ½ cups sugar
1 TBS baking powder
1 tsp Kosher salt
½ cup coconut oil
1 cup whole milk
1 ½ tsp vanilla extract
cake pan (two 9″ round pans or one 13×9″ oblong pan)
Grease and flour pan(s).
Heat oven to 350° degrees F.
Sift together the flour, sugar, baking powder, and salt. Add the coconut oil. Mix together the milk and vanilla and add about half to the bowl. Beat medium speed for 2 minutes. Add remaining milk/extract and the eggs and beat another 2 minutes.
Pour into prepared pans. Bake until a toothpick inserted in the center comes out clean. For layers, about 25-30 minutes, for oblong about 35-40 minutes.
