As much as I enjoy feeding my family, breakfast on Christmas morning always feels like an afterthought to me. We’ve usually been up for hours, opening presents and sipping on coffee and hot chocolate, when suddenly everyone is hungry and I just don’t feel like cooking or dirtying up dishes.

I made this to take to church for breakfast for my Sunday School class. It was really good, and required no syrup for serving. I made it the evening before, popped it into the oven 30 minutes before we had to leave for church, and was able to serve it still warm to my class. I did not take any pictures of the process and I apologize for that. But, the recipe was too good not to share.
Pin ItHere’s the menu for my family for the week of December 12th. As far as desserts go, it’s Gregg’s birthday on Friday, and he has requested a red velvet roll — much like Stacy’s Pumpkin Roll. I will also begin my Christmas Baking.
Pin ItAs I write this, it’s December 6th and we have just under three weeks to prepare for our Christmas baking gift giving. This is a tradition my mother taught me, and something I look forward to and plan for every single year.
Pin ItHere’s the menu for my family for the week of December 5th. As far as desserts go, I’m making Stuffed Red Velvet Cookies (but I’m going to experiment with juicing a beet to use for the red dye instead of commercial dye) for a birthday present for a work colleague of Gregg’s, and making Stacy’s Pumpkin Roll for a birthday present for the kids’ horseback riding instructor. I’ll probably be nice and make double to share with the family. :-)
Pin ItThis is a quick pasta sauce that every member of our family will love. The kale is a wonderful source of vitamins A, C, and K, as well as omega 3 and omega 6. You can use any kind of pasta you want when making this dish. It takes very little time to make, and using grass-fed beef and organic vegetables it’s still barely $3 per person.
Pin ItChili-Mac is one of my kids’ favorite dinners. I love how this is served over cornbread instead of sloppy-joe style over hamburger buns. This is a very-quick, easy to make meal – especially if you’re using leftover cornbread. I used grass-fed beef, and even with organic vegetables it’s still less than $4 per serving.
Pin ItI love how this recipe is a sweet and sour flavor – something that you just wouldn’t think to pair with hamburger meat, yet it absolutely works. It takes almost no time to prepare and is a nice, quick meal when you’re in a hurry but want to feed your family something healthy. I use grass-fed hamburger meat. Coupled with organic vegetables, it’s still just $4 per serving.
