Decadent Cookies & Cream Cupcakes

My friend Heather at Out of the Box into the Kitchen posted the link for this recipe on her Facebook. I’d been looking for something fun and new to take to a church party, and the pictures were so amazing and so appealing that, despite my aversion to packaged cookies, made me want to make them. I found organic chocolate sandwich cookies and felt moderately better about the recipe — but enjoyed the flavor despite the processed product in it. (HA!) So, I’m not going to fool you into thinking there’s anything moderately good for you about these. I did use organic eggs and organic cookies — that’s the best I can give you. But, oh my, they were good. Very rich, but very good.

Resurrection Cookies

I make this recipe with my kids every Easter eve. We enjoy the cookies the next morning with our Easter eggs for breakfast. They are as excited to open the oven door as they are to see what goodies they’ve received through the night. I originally found the recipe here. I LOVE how I get to read the Bible with them as we make these cookies, how they get to have some application to apply to the story to help them retain what they’re reading and/or hearing. This is a beautiful hands-on tool to teach the resurrection of our Lord.

Whole Wheat Vanilla Wafers

I found this recipe on Heavenly Homemaker’s site. The only thing that I do differently is to use vanilla beans instead of vanilla extract. We have grown to love this recipe! Gregg has always loved a snack of vanilla wafers and peanut butter. I love that I found such a healthy recipe. I send a batch or two with every care package to Gregg, and use them when I make Banana Pudding and Mascarpone Cheesecake with Almond Crust.

Natalee’s Oatmeal Raisin Cupcakes

My friend Natalee agreed to do a guest blog for me while my husband and I ran away for a romantic weekend alone. When looking at the dates for the weekend, we discovered that one of the days fell on Benjamin Franklin’s birthday. As a tribute to this American icon, Natalee created a recipe using only ingredients that were found in Mr. Franklin’s time. She then decorated them in brilliant ways to show off Mr. Franklin’s contributions to history and culture. The post showing how to decorate them can be found here. This is a wonderful recipe to do with your children as a homeschooling aid.

Engaging Eggnog Cookies

Do you have some leftover eggnog, too? Not a problem. A friend of a friend shared an Eggnog Cookie recipe that is quick and easy and a perfect “after Christmas” treat. They taste just great topped with nutmeg. They taste even better topped with eggnog icing. They taste the very best topped with both!

Christmas Churros (Mexican Doughnut Strips)

This is my family’s traditional breakfast for Christmas morning. It’s a very light dough, crispy, with a delicate sweet flavor brought about by sprinkling it with sugar and cinnamon. I only make them for Christmas so that we have something different and new to look forward to every year.

Christmas Baking Attack Plan – Week #3

Using your platters or baskets that you bought for each person on your gift list, put a few cookies, a few pieces of fudge, some candy — just make a small gift plate. You don’t need to give a dozen cookies. If I had done cut out sugar cookies, I would have just done four to six designs, then given one of each one. Five or six pieces of fudge is plenty. Three or four pieces of Captain Crunch Candy fills up a portion of a platter. For the two breads, I balance the platter out with a mini-loaf on either side.

Stuffed Red Velvet Cookies

In my wanderings to find the perfect red velvet cookie, I came across this recipe. It looked wonderful, so I tired it. However, I did not make the stuffing. I simply made the cookie. I had to mail these to Gregg, and cream cheese needs to be refrigerated in transport. I’m STILL hearing from soldiers about how amazing these cookies are, a good week after they were eaten.
