Menu Monday 23 MAY 2011 – Jeb’s Birthday Week!

Posted by Hallee on May 23, 2011 in Hallee's Galley, menus & menu planning

Here’s the menu for my family for the week of May 23rd. As far as desserts go, I have to do a graduation cake for a friend’s daughter, a birthday cake for a friend’s daughter, and Kaylee is having a party Friday night. So, I’m not going to do a lot of dessert cooking this week in preparation for the end of the week.

Menu Monday 18 APR 2011 – Passover & Resurrection Sunday Week!

Posted by Hallee on Apr 18, 2011 in Hallee's Galley, Holiday fare, menus & menu planning

Here’s the menu for my family for the week of April 18th. As far as desserts go, last week I thought I was cooking for Kaylee’s softball team, but that is this week. So, I’ll be making Delectable Deluxe Brownies Tuesday. We’re observing a Passover Seder on Wednesday, and I’m going to attempt a flour-free lemon cheesecake. The children will be making Resurrection Cookies Saturday night.

Lick-the-Bowl-Good Cream Cheese Frosting

Posted by Hallee on Mar 14, 2011 in Desserts, Hallee's Galley, Recipes

I’m a big fan of simple is better. Since Gregg’s favorite cake is red velvet cake, I’ve tried many cream cheese frosting recipes seeking the best one. This recipe, with its four simple ingredients, is the best I’ve ever found. It’s light, creamy, and beyond delicious.

Menu Monday 21 FEB 2011

Posted by Hallee on Feb 21, 2011 in Hallee's Galley, menus & menu planning

Here’s the menu for my family for the week of February 20th. As far as desserts go, I’m going to make the kids a Deep Dark Chocolate Cake (HOW have I not posted that recipe yet? I will rectify that asap!) and will just have a container of whipped cream in the fridge to top it with as they get a slice!

Menu Monday 29 NOV 2010

Posted by Hallee on Nov 29, 2010 in Hallee's Galley, menus & menu planning

Here’s the menu for my family for the week of November 29th. As far as desserts go, My husband’s birthday is in 2 weeks. I’m going to prepare his birthday box, and include Heavenly Red Velvet Cake mini cupcakes and some Stuffed Red Velvet Cookies (not stuffed). In the meantime, our cookie jar is getting low, so I’ll probably make some whole wheat chocolate chip cookies (which I strangely don’t have a recipe up for and will rectify that soon!)

Tip: The Importance of Measuring

Posted by Hallee on Oct 19, 2010 in Hallee's Galley, kitchen & cooking tips

Monday, as I was baking for the week and making both kinds of bread, I pulled out my worn recipes and followed them, carefully, step-by-step. As I did this, I was reminded of something that an ex-inlaw once said to me. She said that I wasn’t a real cook because I measured. She said that real cooks don’t have to measure.

Decadent Cookies & Cream Cupcakes

Posted by Hallee on Jun 3, 2010 in Desserts, Hallee's Galley, Recipes

My friend Heather at Out of the Box into the Kitchen posted the link for this recipe on her Facebook. I’d been looking for something fun and new to take to a church party, and the pictures were so amazing and so appealing that, despite my aversion to packaged cookies, made me want to make them. I found organic chocolate sandwich cookies and felt moderately better about the recipe — but enjoyed the flavor despite the processed product in it. (HA!) So, I’m not going to fool you into thinking there’s anything moderately good for you about these. I did use organic eggs and organic cookies — that’s the best I can give you. But, oh my, they were good. Very rich, but very good.

Natalee’s Memorial Day Cupcakes

Posted by Hallee on May 28, 2010 in Desserts, Hallee's Galley, Holiday fare, Recipes

My friend Natalee is a veterinarian living in Washington state with her husband and 2 awesome kids. Imported from Canada some years ago, she does things with cupcakes you just cannot believe. You can find her other amazing contributions to the blog here. I wrote her a couple of weeks ago and asked if she could do a cupcake for Memorial Day. I cannot tell you how thrilled I was when she decided to do something with Forget-Me-Nots. These flowers are traditional memorials for Canada’s Newfoundland’s war dead instead of the Flanders Poppies that are popular in America. These cupcakes are beautiful. She named them “Red, White, and Blueberry Cupcakes with Forget-Me-Nots.”

“Team Jacob” Cupcakes

Posted by Hallee on May 25, 2010 in Desserts, Hallee's Galley, Holiday fare, Recipes

A friend’s 8-year-old daughter asked for a “Jacob” cake. For Kaylee, I could have gone all abstract with bloodly feathers, apples, and stacks of books. For a bunch of second graders, I had to be a little more inventive. So, here’s what I came up with:

Festive Tres Leches Cake

Posted by Hallee on May 5, 2010 in Desserts, Hallee's Galley, Holiday fare, Recipes

A beautiful finish to any festive Cinco de Mayo celebration. Tres leches means three milk – so this translate to “Three Milk Cake.” This actually blends the idea of a three-milk cake from Latin American tradition with a rum cake from Puerto Rican tradition.
