Popcorn? Really?

As I was doing research for purchasing my grain mill, I read all sorts of “don’t do’s.” One of them was don’t try to grind anything that was too hard, including popcorn. But, when I got my grain mill (a NutriMill) the booklet that came with the machine said, “Popcorn will make the best cornmeal you’ve ever tasted.”

The Concession Stand

At the BINGO hall is a concession stand that sells the typical fare – mostly soy hamburgers on white bread, pork hotdogs, chips with nacho cheese, frozen “pizza logs” reheated in a microwave, etc. Consequently, when I get home from the soup kitchen, I usually make a big dinner and take it to feed to the volunteers.

Tantalizing Tomato & Onion Tart

I’ll admit that I have not yet made this dish. However, it sounds fantastic and it is more of a “when I add it to the menu” kind of thing rather than an “if I add it to the menu.” This would be an amazing brunch or lunch dish, a perfect potluck change from the normal pot of country beans, or the base for a vegetarian dinner. It is almost limitless as a dish. I cannot wait to try it.

Quick & Easy Sloppy Joes

My dad came up with this recipe one time. My mom was somewhere doing something and Daddy had to make dinner. He browned hamburger then started dumping things into the pan. He used home canned tomatoes and home canned green beans, which made his version amazing. I’ve not enjoyed Sloppy Joes without the green veggie since.

Comfort Food Meatloaf

Meatloaf is one of my favorite dishes, if I prepare it or if my mother prepares it. I’ve learned not to order it in restaurants or get it off of buffets, because a lot of people do something to it that I just don’t do – but I’m not sure what that is. I’ve always used green peppers when I make it, but I didn’t have any the day I made it for these pictures, so I used yellow peppers. I LOVED the difference. I will from now on use yellow peppers to make my meatloaf.

Menu Monday 26 April 2010

Here’s the menu for my family for the week of April 26th. As far as desserts go, my niece and sister-in-law will be in town, so I’ll definitely do something chocolate, and preferably flour-free (my sister-in-law suffers from a wheat allergy.) I’ve never done one of those flour-free cakes, but if you have a good recipe, I’d love to try it!

Amazing Au Gratin Potatoes

This is the perfect side dish for just about any meat main dish, from meatloaf t0 leg of lamb. I LOVE scalloped potatoes and au gratin potatoes. I didn’t used to make them because I worked and would get home so late to be able to put them in the oven and have them cooked in time for dinner, so to me they became a “special” side. Despite having my menu planning help me to know what to prepare when and how to have it ready in time for dinner, in my mind, scalloped and au gratin potatoes are special.
