Decadent & Creamy Marshmallow Coconut Frosting
I made this frosting to fill my Red Velvet Whoopie Pies, but it would be an amazing frosting for any kind of cupcake or cake.
½ cup butter, softened
½ cup coconut oil
2 cups powdered sugar
7½ ounces Marshmallow Creme (the original recipe called for 1 jar of marshmallow fluff, so I used a scale to weigh my homemade Marshmallow Creme)
2 tsp vanilla extract
Mixing bowl
Mixer
Measuring cups/spoons
Beat the butter and coconut oil until well blended. Add the powdered sugar and beat until fluffy. Add the marshmallow creme and the vanilla and beat in until well mixed.

Does the coconut oil give it a coconut flavor? I’m not a fan of coconut, so if it does flavor it, is there a suitable substitution you can think of?
Yes – it does give it a coconut flavor. You can just do one full cup of butter, if you’d like.

I have tried several things with whipped cream egg whites etc and failed. I am going to try this recipe to see if I can do what they’re doing in that video.

Well there is a lot I could share as I have been obsessed with making the style of cake in the Quenary Academy video demo. I don’t think I will revisit this recipe any time soon even though it still seems like a good idea. I used all butter. I have coconut oil but I’m not sure if I’m supposed to melt it first or if it dissolves and as a result things were very buttery. I think I will opt for making royal icing next time. Right now I am looking at non dairy whipped toppings because I just discovered a comment that claims this is what is being used.
