I made this frosting to fill my Red Velvet Whoopie Pies, but it would be an amazing frosting for any kind of cupcake or cake.

Every time I’ve made my own marshmallow creme for a recipe, be it for Homemade Fudge or the filling for Whoopie Pies, the flavor of the end result is so much better than if I’d used a jar of “marshmallow fluff.” It’s so easy to make that I haven’t bought the jar stuff in years. This recipe makes about 16 ounces, which is more than the equivalent of two jars.
Pin ItHere’s the menu for my family for the week of December 27th. As far as desserts go, we still have some Captain Crunch Candy and some fudge left, but the cookie jar is empty. I will probably make some easy cookie to fill the jar and use the left over marshmallow cream and Rice Crispies from the goodies I made last week and make some Rice Crispies treats. We’ll also make a celebration New Year’s 2011 cake.
Pin ItLast week and this week, the Boy Scouts of America are celebrating their 100th Anniversary. I wanted to do something to recognize that, but with the church’s Valentine’s Day banquet this week, I was unable to do something “big” (like my idea for a cake with all of the logos of the different levels of Scouting.) Instead, I’m “stealing” a recipe from my brilliant cupcake artist friend, Natalee. Scouting makes me think of camping, camping makes me think of s’mores, and in a desperate attempt to be clever, I’ve dubbed these “Cub Cakes” (for the Cub Scouts…you get it…heh.)
