Delectable Blondies

My husband does not like chocolate, so whenever I make Brownies, I always make him a pan of Blondies.  Instead of relying on chocolate for their flavor, they’re all about the brown sugar, giving them a wonderful flavor of molasses, warm and inviting.

INGREDIENTS:

1 cup all-purpose flour (or fresh ground whole wheat soft white)
½ cup unsalted butter (no substitutions)
1 cup tightly packed dark brown sugar
1 egg, lightly beaten
1 teaspoon pure vanilla extract
½ teaspoon baking powder
⅛ teaspoon baking soda
Pinch Kosher or sea salt
⅓ cup butterscotch chips
⅓ cup chopped walnuts

SUPPLIES:

large bowl
whisk
8×8 square pan
rubber spatula

PREPARATION:

Preheat the oven to 350° degrees F.

Lightly butter and flour pan.

DIRECTIONS:

Whisk together the melted butter and sugar in a bowl.

Add the egg and vanilla extract and whisk.

Add the flour, baking soda, baking powder, and salt, mix it all together. Add the butterscotch chips and nuts.

Spread into the pan.  Bake for 20-25 minutes or until a toothpick comes out clean.

Cool.  Cut into squares and serve.

YIELD:

9 Blondies.

NOTES:

You can use a 9×9 square pan, but they will be thinner and cook in less time.

Butterscotch chips are optional.  I usually just use walnuts.
