Here’s the menu for my family for the week of Monday, February 1st. As far as desserts go, I’m going to be playing around with some Valentine’s dessert ideas for the blog, so we’ll likely do some cupcakes and at least some cookies – maybe some truffles, too.

Here in Kentucky, we got a couple feet of fresh snowfall last night. After lunch today, I thought I’d give a try at homemade snow ice cream. I’d seen it mentioned a few times around the blogging world, but I wanted to make a healthy version without white sugar. I saw maple syrup used in one of the recipes I read, and thought that would be the perfect flavor to blend with the vanilla and the cream. It was quite delicious.

I accepted Jesus Christ as my personal Lord and Savior at the ripe old age of 5. Some of you reading this may think that 5 is too young, but I knew the Truth, could answer all of the questions posed to me by my parents and my pastor, and so they determined that I would be allowed to make a public profession of faith, followed by a water baptism. I was so small that my feet flew up out of the water when the pastor dunked me. I’d love to say that my journey ended there. I’d love to say that I’ve been the epitome of the perfect Christian girl and that I lived every day in the subsequent 32 years for God. However, that’s not my story.
