Crockpot Turkey Breast with Cranberry Pomegranate Sauce
Pom Wonderful asked me to come up with some pomegranate recipes. I had a turkey breast in the freezer and a bag of cranberries in the fridge, so I thought I would see what I could come up with.
1 turkey breast on the bone
1-2 cups fresh cranberries
1 large onion
2 cups pomegranate juice (I use Pom Wonderful)
1 sprig fresh rosemary
salt and pepper to taste
1/2 cup brown sugar
crockpot
measuring cups
deep skillet
spoon
Salt and pepper the turkey to taste.
Slice the onion.
Put the onion and the cranberries in the bottom of the slow cooker.
Add the sprig of rosemary.
Place the turkey on top, meat side down.
Add pomegranate juice.
Cover and cook until the meat is done. I cooked it on high for 6 hours.
Remove the meat from the pot.
Pour the juice into the frying pan.
Bring to a boil. Reduce heat to medium and boil for about 30 minutes, to reduce the juice. Add brown sugar.
Return the meat to the pot and cover with the reduction. Keep warm until ready to serve.

The meat is WONDERFUL on its own. I added the sauce, but Kaylee felt that it had too strong of a flavor for her. I enjoyed it with the sauce but tasted the meat without and was very very happy with the flavor.
