I LOVE cranberry bread! Whenever I make muffins/mini loaves I leave 2 out and freeze 2. I really like the red color of the cranberries – you take such wonderful pictures!
ps. Do you have a space saver? I’ve heard of shipping breads/muffins to the sandbox successfully if you suck all the air out… just be sure to freeze the loaf first so it retains its shape! :)
It NEVER occurred to me to freeze them first. Wow. What a difference that will make! I have a banana bread recipe that is the kind of recipe that makes people stop and just savor the flavors. The woman who gave me the recipe called it, “The Best Banana Bread You’ll Ever Eat” and I haven’t found anyone to disagree with me yet. In fact – she posted it on a message board and about 20 people said the same thing and still come back and say, “Help! I can’t find ‘our’ banana bread recipe!” and it’s been since I was pregnant with my 3.5 year-old that she posted it. I sucked all the air out and the loaves ended up looking like something in an MRE gone postal, and thought, “Well, it’s ‘The’ banana bread – he’ll love it.” All he said was that it smelled good and it was a ‘little dense’. HAHA
His birthday is in a few weeks and I’m making some red velvet cookies. I’ve been stressing about that because they’re so soft. I will now freeze them first. How could something so obviously easy just never even come to my mind?
Mmm, this looks like a super gift. And I just happen to have a bag of cranberries in my fridge :) Would you ever consider sharing THE banana bread recipe? It sounds like it’s a winner.
