Delicious Cranberry Nut Bread
I make this bread in mini-loaf pans and give it as a gift during Christmas. It’s a wonderful bread, the perfect balance between sweet and light.
2 cups all purpose flour (or whole wheat)
1 cup sugar or honey
1½ tsp baking powder
1 tsp Kosher or sea salt
½ tsp baking soda
¼ cup unsalted butter (cold)
1 egg
¾ cup fresh squeezed orange juice
1 TBS grated orange peel (orange zest)
1½ cups fresh cranberries
½ cup chopped nuts (walnuts or pecans)

juicer
1 large bowl
1 small bowl
pastry cutter or fork for cutting the butter into the flour
loaf pan
sharp knife and cutting board or a food processor
Zest the orange peel until you have 1 TBS
Squeeze the orange until you have ¾ cup
Chop the cranberries (I use a food processor)
Grease and flour loaf pan
Preheat oven to 350° F
In the large bowl, combine flour, sugar, baking powder, baking soda, and salt. Using a fork or a pastry cutter, cut in butter until mixture resembles coarse crumbs.
In the small bowl, beat together the egg, orange juice, and orange peel.
Make a well in the center of the dry ingredients. Pour the egg mixture into the well, Gently stir just until blended. Add the cranberries and nuts.
Spoon into loaf pan and bake at 350° F for 65-70 minutes or until a toothpick inserted near the center comes out clean. Cool in pan 10 minutes before removing from pan and cooling completely on a wire cooling rack.

I LOVE cranberry bread! Whenever I make muffins/mini loaves I leave 2 out and freeze 2. I really like the red color of the cranberries – you take such wonderful pictures!
ps. Do you have a space saver? I’ve heard of shipping breads/muffins to the sandbox successfully if you suck all the air out… just be sure to freeze the loaf first so it retains its shape! :)

It NEVER occurred to me to freeze them first. Wow. What a difference that will make! I have a banana bread recipe that is the kind of recipe that makes people stop and just savor the flavors. The woman who gave me the recipe called it, “The Best Banana Bread You’ll Ever Eat” and I haven’t found anyone to disagree with me yet. In fact – she posted it on a message board and about 20 people said the same thing and still come back and say, “Help! I can’t find ‘our’ banana bread recipe!” and it’s been since I was pregnant with my 3.5 year-old that she posted it. I sucked all the air out and the loaves ended up looking like something in an MRE gone postal, and thought, “Well, it’s ‘The’ banana bread – he’ll love it.” All he said was that it smelled good and it was a ‘little dense’. HAHA
His birthday is in a few weeks and I’m making some red velvet cookies. I’ve been stressing about that because they’re so soft. I will now freeze them first. How could something so obviously easy just never even come to my mind?
