Hurry-Up Hush Puppies
Wonderful served with Fried Fish.
2 cups whole wheat flour (I use fresh ground soft white)
1 cup corn meal (I use fresh ground organic popcorn)
1 tsp Kosher or Sea salt
2 tsp aluminum-free baking powder
½ tsp garlic powder
½ cup chopped green onions
1 egg
½ can organic creamed corn
½ cup milk
oil for frying
bowl
measuring cup/spoons
sharp knife and cutting board
frying pan
Finely chop green onion
I use a chopper to get a really fine chop. You can see the difference between with knife and the chopper:
For the best tasting results, make this immediately after frying fish and use the same oil. Otherwise, put 2 inches olive oil in a deep frying pan or dutch oven and heat to 375° degrees F.
Mix together dry ingredients.
Add the remaining ingredients and mix well.
Drop by rounded tablespoon into hot oil.
Cook until browned on one side, then carefully turn over and cook the other side.
Drain on paper towels.
About 20 hush puppies.
