Friday Fried Fried Fish
Even though baked is “healthier,” this dish is really, really good. I like to serve it with hush puppies, fried potatoes, and cole slaw.
4 fillets of white fish (I prefer tilapia)
2 cups all purpose flour
1 cup milk
¼ cup canola or safflower oil (or olive oil)
1 ½ tsp Kosher or Sea salt
¼ tsp black pepper
1 egg
oil for frying (cannola or olive)
bowl for batter, bowl for flour
measuring cup/spoons
sharp knife/cutting board
frying pan
Cut the fish in chunks.
In a deep frying pan or a dutch oven, heat 2 inches of oil to 375° degrees F.
Mix together 1 cup flour, 1 tsp salt, and ¼ tsp black pepper. This is to dredge the fish before putting in the batter. I use a pie plate.
In a separate bowl, mix together 1 cup flour, milk, ¼ cup oil, ½ tsp salt, and the egg.
Dredge the fish in the flour mixture.
Dip in batter.
Gently place in hot oil.
This will cook very quickly (2-3 minutes). As soon as it’s brown, turn over and let the other side cook. When both sides are golden brown, drain on paper towels.
