Similar to small pancakes, these light, crispy medallion-sized treats are a delight served with honey or petimezi… or with syrup, preserves, or a creative topping of your own design. They can be eaten as a sweet snack, with breakfast, or as a brunch dish. Favorites during The Great Lent, these contain no eggs or dairy products. If served with honey, they are perfect for a Daniel Fast as well.Pin It
I LOVE these pans. I will admit that I don’t use the 6″ pan often. I would consider this set complete without it. I use the 10″ pans ALL THE TIME. I use them for grilled cheese, casseroles, sauces, fried chicken, fried fish, doughnuts — you name it, I use these pans to cook it. I would be lost without these pans.
I modified this recipe to be able to make it with what I had on hand. For instance, the original recipe called for fresh saffron and white rice; however, I don’t keep fresh saffron in my cupboard, but I had a package of saffron rice. I am posting the recipe as I made it, so that I can be confident that you’re getting a good recipe that I’ve tried out.Pin It
