Here’s the menu for my family for the week of May 17th. This is something different this week. While working on the Power of a Praying Wife last week, I was convicted that I need to work on my physical health and fitness. I eat extremely healthy meals, but I have a problem with portion control. Couple that with my love of all things cake and my lack of focused exercise this winter, I gained too much weight.

Here’s the menu for my family for the week of May 10th. As far as desserts go, Scott has been asking for some brownies, and since I need to send my husband a care package, I’ll make a double batch. After the Easy Cheesy Chili Empanaditas I made last week, I’ve been hungry for some turnovers, so we’re going to make some apple turnovers, too. I’ll post that recipe when I get them made.
I’m catering a lunch on Saturday this week that I’m really excited about. The church where I used to attend has put together a team of cosmetologist volunteers who will be doing hair, makeup, and nails for underprivileged high school girls for prom night. They asked me to cater lunch for the volunteers and the girls. I haven’t put a menu together yet, but I will be posting the menu and the recipes when I get it together.
Pin ItHere’s the menu for my family for the week of Monday, May 3rd. This week is Cinco de Mayo AND Mother’s Day! So, this is going to be a fun week for cooking. I love making menus for special occasions. I will be spending Mother’s Day weekend at my parents’ so I won’t have control over the menu there, but I do plan on bringing my mom a cheesecake (I haven’t decided what kind yet, so you may be getting an new cheesecake recipe headed your way soon!). For Cinco de Mayo, I’m going to make a Tres Leches cake . On top of that, I received an email from my husband asking for “cookies, lots of cookies.” Apparently, homemade cookies are a big hit at his office, and everyone waits around for him to get a new box from home.
Pin ItHere’s the menu for my family for the week of April 19th. As far as desserts go, I saw an amazing coconut cake recipe that I want to make with a fresh coconut.
Pin ItRadishes used to be part of the meal, but lately seem to be relegated to color in green salads. This is such a quick dinner that is a different blend of tastes than the “norm” and utilizes radishes to their fullest extent. If you’re looking for something new to try, seeking out a new family favorite, you found it here.
Pin ItWe are traveling to Florida this week. I plan to pack sausage biscuits for breakfast and a picnic lunch for the drive down, so that we can avoid any fast food restaurants. Hopefully, the weather will be nice and we can stop and picnic at a rest area, giving the boys a chance to stretch their legs and play a bit.
