Fresh Pumpkin Pie

Ever since the first time I used a fresh pumpkin, I’ve much preferred that over canned pumpkin. I have not yet come across a pumpkin recipe that I wasn’t able to use the fresh pumpkin in lieu of canned. This pie turned out beautifully and cooked perfectly. I used whole wheat flour and coconut oil to make the crust.

Tip: Saving Money On Yeast

I make all of my bread homemade. About a month into making this commitment, it occurred to me that yeast, the way I was purchasing it, isn’t cheap. On sale, it seems like I could find the three-envelops of yeast for about $1.10. One loaf of bread, one batch of buns, one patch of pita bread, two pizza doughs — all of those take one envelope of yeast.I make all of my bread homemade. Tip: The Importance of Measuring

Monday, as I was baking for the week and making both kinds of bread, I pulled out my worn recipes and followed them, carefully, step-by-step. As I did this, I was reminded of something that an ex-inlaw once said to me. She said that I wasn’t a real cook because I measured. She said that real cooks don’t have to measure.

Popcorn? Really?

As I was doing research for purchasing my grain mill, I read all sorts of “don’t do’s.” One of them was don’t try to grind anything that was too hard, including popcorn. But, when I got my grain mill (a NutriMill) the booklet that came with the machine said, “Popcorn will make the best cornmeal you’ve ever tasted.”

Menu Monday 13 SEP 10

Here’s the menu for my family for the week of September 13th. This is my first week with my new schedule, so I will be doing all of my baking on Monday. My husband has requested Whole Wheat Oatmeal Raisin Cinnamon Chip Oatmeal Cookies. I also may try my hand at carrot cake – something I have never made before but something I’ve always wanted to try. A friend of mine posted on her Facebook a chocolate chip whole wheat pumpkin muffin recipe and said it was delicious. I have the rest of last year’s pumpkin in the freezer still, and pumpkins growing in the garden that will be used to replace the stash, so I need to do some pumpkin baking. I think chocolate chip pumpkin muffins is a brilliant use of my supply.

Tantalizing Tomato & Onion Tart

I’ll admit that I have not yet made this dish. However, it sounds fantastic and it is more of a “when I add it to the menu” kind of thing rather than an “if I add it to the menu.” This would be an amazing brunch or lunch dish, a perfect potluck change from the normal pot of country beans, or the base for a vegetarian dinner. It is almost limitless as a dish. I cannot wait to try it.

Menu Monday 24 Aug 2010

Here’s the menu for my family for the week of August 24th. As far as desserts go, my cake plate is empty. I think we need a cake. I have a coconut and saw a fresh coconut cake recipe. If I can find that recipe (I read it in a doctor’s office several weeks ago) I think I’ll give it a go. Kaylee’s favorite is coconut. We have a cookie jar about half filled with Oatmeal Raisin Cinnamon Chip Cookies that Gregg and I made with homemade cinnamon chips (we didn’t like the ingredients in the Hershey’s brand.) I’ll be posting that recipe and process, and likely will make him another batch to mail to him with a box that has to go out next week. Kaylee has also requested chocolate chunk cookies (recipe to follow) for her lunches next week.

Easy Cheesy Chili Empanaditas

This is an amazing dish. The pastry is so light and buttery that it nearly melts in your mouth. The cheese combined with the chilies is a remarkable flavor. They can be an appetizer for a Cinco de Mayo celebration, or a delicious and savory treat for lunch.
