Wonderful Whole Wheat Sopapillas

I have a good friend who asked me to make whole wheat sopapillas, so I’ve been researching recipes. I finally came up with one that will please all of us “real food” minded mamas. Sopapilla means “little pillow” and can be used in a savory dish much like a tortilla or a pita bread. For this dish, I used them as a breakfast bread and drizzled them with honey. They were beyond amazing. A wonderful breakfast to kick of a Cinco de Mayo celebration.

Whole Wheat Vanilla Wafers

I found this recipe on Heavenly Homemaker’s site. The only thing that I do differently is to use vanilla beans instead of vanilla extract. We have grown to love this recipe! Gregg has always loved a snack of vanilla wafers and peanut butter. I love that I found such a healthy recipe. I send a batch or two with every care package to Gregg, and use them when I make Banana Pudding and Mascarpone Cheesecake with Almond Crust.

Mascarpone Cheesecake with Vanilla Almond Crust

I derived this cheesecake from one I saw on a food show one time. I’m always afraid when I make cheesecake that it’s going to be heavy and dry when it comes out. That’s never happened to me – and this recipe especially is so moist, and so melt-in-your-mouth that during a dinner party Gregg and hosted with four other couples, when dessert was served and everyone took a bite, there was a collective silence, then moan of appreciation. It was amazing and those friends still talk about that dinner party.

Whole Wheat Bread Bowls

A friend of mine posted a Facebook status about homemade potato soup that she put in Panera bread bowls, and I made the comment that they wouldn’t be hard to make. A few days later, she flagged me on the Hallee the Homemaker fanpage and asked if I’d made bread bowls yet. So, here they are.

Menu Monday 14 Dec 09

Here’s the menu plan for the week of Monday, 14 December 2009 for my family. As far as desserts go, I’ll be doing all of my Christmas baking this week. Last week, sickness ran through our house, so I didn’t do a lot of cooking or baking and I have some time to make up for.
