Menu Monday 2 MAY 2011 – Mother’s Day, Amigos!

Menu for the week of 2 May 2011

The “rules” of our household diet can be found in the tab above labeled Hallee’s Galley and further explained in Our Diet.

I usually serve leftovers for lunch the next day, or we’ll save them during the week to graze lunch on the weekends. One meal a week, we eat whatever we want. This is usually our “Dinner Out” meal.

Almost all of the breads are homemade using fresh milled flour.  I’ll continue to link to my recipes as I post them.  Our daily bread is Whole Wheat Honey Oatmeal Bread.

Here’s the menu for my family for the week of My 2nd. Today and tomorrow is Pastors’ Fellowship at our church.  I am SO excited about this.  I’ll be making Hallee’s Travel Sandwiches to add to the sandwich pile as we serve lunch to hundreds of pastors and their wives and various other music leaders and church goers from within the First Church of God.

As far as desserts go, Scott has been begging me  to make  Jell-O.  I have some unflavored gelatin and I’m going to play around with some fruit juices.  I think I’ll also fill the cookie jar with some of DoodleRoo’s Snickerdoodles.  It’s also Cinco de Mayo AND Mother’s Day week.  This happened last year!  We’ll be making a festive Tres Leches cake to have with our Taco Dinner on the 5th.  And I hope to make my mom something special to take with me to my parents’ house this weekend.

Kaylee has testing for the next two weeks.  She said, “I’m going to need some good breakfasts the two weeks of testing.”  It made me laugh, because she apparently has NO idea just how good she eats in the morning — and when teachers say that, they’re talking to the kids who are lucky to get a pop-tart to go with their can of soda.  But, I’ll rev up the protein a little for her, so that she feels like she’s made a positive change toward a good breakfast.  She also asked me to make her a High Protein Breakfast Smoothie every morning.  I have these portable smoothie containers with a ball whisk in them that will be perfect for her to take to school.

Monday:

 

Breakfast:

turkey sausage links, scrambled eggs, High Protein Breakfast Smoothie

Dinner:

We will be at church all day, with an hour break for dinner.  I’m going to put Heat-Free Chili in the crockpot and bake some Old Fashioned Cornbread before we leave for church in the morning.  As soon as Kaylee gets home from school, I’ll run home, grab her and the food, and take it back to the church.  Dinner is on our own, but I’m certain I’ll be able to find someone who didn’t want to leave the church ground and who will want to share our meal with us.

Tuesday:

Breakfast:

beef sausage, cheese grits, scrambled eggs, High Protein Breakfast Smoothie

Dinner:

We will have been at church all day, then I have to volunteer that night.  The kids will have a babysitter, but I can have the sauce made and leave her some whole wheat pasta to boil.

Wednesday:

Breakfast:

corned beef hash, fried eggs, High Protein Breakfast Smoothie

Dinner:

roasted chicken, Brown Rice Pilaf (recipe to follow), steamed broccoli, garden salad

Thursday – Cinco de Mayo!:

We love Cinco de Mayo only because we love Mexican food!
