Scrumptious Cookie Pizza

I love making this and taking it to events.  It’s attractive, striking to the eye.  It’s delicious.  And, as far as desserts go, it’s moderately healthy compared to what desserts could be.

INGREDIENTS:

COOKIE:
1½ cups butter
1½ cups sugar
3 eggs
1 tsp pure vanilla extract
4½ cups whole wheat flour (I used fresh ground soft white wheat)
¾ tsp baking soda
¾ tsp baking powder
¾ tsp Kosher or sea salt

PIZZA TOPPINGS:
About one-fourth of a fresh pineapple
2 packages cream cheese
½ cup powdered sugar
fresh fruit such as kiwi, strawberries, blueberries, raspberries, pineapple, star fruit, peaches

 

SUPPLIES:

food processor
mixer
two pizza pans or cookie sheets
measuring cups/spoons
sharp knife/cutting board

PREPARATION:

Preheat oven to 350° degrees F (120° degrees C)

Soften cream cheese.

DIRECTIONS:

In a mixer, mix butter and sugar.

Add egg and vanilla.

Beat until smooth.

Add the dry ingredients.  Mix until just mixed.

Divide the dough in half.  With floured hands, pat the dough into each pan.

Bake about 10 minutes, or until brown.

Remove from oven and cool completely.  Don’t try to continue with the cookie still warm.

While the cookie is cooling, slice your fruit.  Use any combination that appeals to you.  I try to use several different colors.

Cut one-fourth of a pineapple into chunks.  Put in a food processor and blend until well ground up.

In a mixing bowl fitted with a whisk attachment, add cream cheese, powdered sugar, and pineapple.

Mix until well mixed.  It will be lumpy with pineapple.

Spread onto each cookie.

Using even patterns, put the fruit on top of the cream cheese.

YIELD:

2 pizzas – about 20-30 servings.
