Mirepoix [mir-pwah]

I just want to pause in the middle of making this Amazing Butternut Squash Bisque to tell you that my kitchen smells fantastic.

In bare bones basic, a mirepoix is onions, carrots, and celery.  It is typically used as a base for French soups.  Bisque is a French soup, so it stands to reason that the base is going to be a mirepoix.

But basics and reasons and definitions aside, I wish you could smell the amazing aroma that is tantalizing my appetite right now.

THIS is going to be a good soup.

Very high in dietary fiber
Very high in vitamin A
Very high in vitamin C
High in vitamin B6
High in manganese
High in potassium
Very low in saturated fat
No cholesterol
